Inside this package you will receive our Alberta raised, AAA, 28 day aged, center cut, grass fed & grain finished, Beef Tenderloin Tips (6 x 8 oz.). These portions have been individually frozen and vacuum packed for easy preparation and to preserve freshness.

Cooking Instructions

Cook from a thawed state until you have reached your desired consistency or until you have reached an internal temperature of 165 degrees Fahrenheit. For best results thaw this product in your refrigerator for 24 hours & quickly rinse off with water before cooking.

Stove Top:

  1. Cut strips less than 1-inch wide. Rotate the meat and cut into small bite-size pieces. 
  2. Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings. 
  3. Next, turn on your ventilation fan-you'll need it! Heat the skillet over medium-high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, and then get very brown, before you add the meat. 
  4. Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30 to 45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside. 
  5. Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

    Marinade

    1. In a dish or in a large sealable plastic bag, combine all the ingredients. Add the meat and toss to coat. Cover the dish or seal the bag and refrigerate for about 24 hours, or at least 6 hours.

    Skewers

    1. Preheat the grill, setting the burners to high. Oil the grate.
    2. Thread the meat and vegetables onto the skewers, alternating between beef cubes, bell peppers and mushrooms. Season with salt and pepper. Reduce the heat to medium. Grill the brochettes for 3 to 4 minutes on each side or until the beef is rare and the vegetables al dente, or until the desired doneness.
    3. If desired, drizzle the skewers with honey when serving. Serve with a garden salad.
